Recipe for Nutty Cream Sauce for Pasta

Pasta in White sauceThe Italian restaurant CaffĂ© Milano in La Paz offers guests an authentic dining experience in the warmth of a well restored building dating more than a century   and located in the heart of downtown.

The menu is a selection of traditional favorites including house made pastas, prime cuts, homemade sausages as well as fresh seafood, and organic salads, always accompanied with  daily baked bread.

Chef Lei, owner and head chef at Caffe Millano provides us this recipe.

This a great nutty creamy sauce to toss with wide pasta or even with spaghetti.

SALSA DI NOCI

4 portions
18 Walnut
1/3 cup pine nuts
1 Clove of garlic
1 bunch of flat leaves parsley
1 cup of heavy cream
salt and pepper
3 TBSP freshly grated parmigiano
2 TBSP butter

Preparation
1) The most important thing in preparing the sauce is to put a little of love and happiness from your heart when you are doing it.
2) Blanch the walnut and remove the skins.
3) 3/toast the skinless walnuts and pines nut.
4) 4/chop the walnuts, pine nuts, garlic,and parsley finely in a blender
5) Slowly add the cream
6) Season with salt and pepper
7) Pour over cooked al dente pasta with grated parmigiano cheese and melted butter.( Thin the sauce with pasta hot water.
8) Top with extra toasted chopped walnut, finely chpped parsley and touch of fresh black pepper
